Recipe submitted by NTS Health Mayonnaise is easy to make and really worthwhile when using nutrient-rich ingredients.

  • Use a blender for continuous mixing while you pour in the oil. I like to use a combination of Macadamia, Olive and Flaxseed oils and the amazing Red Gold™. Try this on warm steamed sweet potatoes, as a coleslaw dressing or a variation of a Caesar salad dressing.

True free-ranging chooks produce eggs rich in Omega 3 fatty acids and Omega 3 can also be found in Macadamia and Flaxseed oils. Red Gold™ contains luxury levels of carotene and vitamin E. Always take care of your Flaxseed oil as it can oxidise easily from heat and with age.

Mix the egg, garlic, salt, pepper and mustard in a blender for a few seconds until blended then add oil in a steady stream until the mixture is emulsified. Taste and adjust seasonings as needed. This is best eaten fresh but store in the fridge if there is any left over!

  • 1 egg
  • Garlic
  • Pepper
  • Nutri-Salt
  • Grainy Mustard
  • 1 cup of oil; mostly macadamia and olive and a dash of Red Gold™ and flaxseed.
